    flour tortilla- 8 inch - cut into 2x1 inch strips

    cups shredded cheese - cheddar

Directions

in a 10 inch skillet, heat oil over medium heat. cook chicken in oil 3 - 4 minutes, stirring occasionally, until no longer pick in center. stir in veggies, beans, salsa; reduce heat to mediu,. cover and cook 6- 8 minutes, stirring occasionally, until veggies are crisp tender. sprinkle with tortilla strips and cheese. cover and cook 2 minutes or until cheese is melted.
