Green with Envy Cupcakes

Ingredients

  • 1 cup unsalted butter room temp
  • 2 eggs room temp
  • 2 large yolks
  • 1 cup heavy cream
  • 2 cups sugar
  • 3 cups all purpose flour
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp ground or powder green tea

Preparation

Step 1

1. preheat oven to 325
2. cream butter and sugar about 3-5 min
3. add eggs and yolks one at a time, beat until well incorporated about 2 minutes
4. whisk flour, baking powder, salt together
5. add to wet ingredients, mix to combine
6. mix green tea with the cream, mix until soft peaks form fold into batter.
7. pour in tins and fill 3/4 full
8. bake 22-25 min using toothpick test
9 cool for 5 min and transfer to rack

Ginger Frosting

1 8oz pckg cream cheese, room temp
6 tbsp unsalted butter, room temp
2 cups powdered sugar
2 tsp finely greated peeled fresh ginger
2 tsp ground ginger
1/4 cup finely chopped crystallized ginger

cream butter, cream cheese together about 3-5 min until fluiffy. add sugar and beat until smooth. fold in the powdered and crystallized ginger, fost cooked cakes and sprinkle fresh ginger on frosting
