Aebleskivers

A Danish holiday often begins with a breakfast of aebleskivers, puffy pancakes sometimes filled with apples. Also called Norwegian Puff Balls, these little globes are customarily dusted with powered sugar and served with jam and butter. A popular dessert served with hot spiced wine, aebleskivers can be filled with savories such as herbs, cheese, or salami. Once the cakes brown on one side, use a knitting needle or two-tined ford to turn them. The aebleskivers are down when the needle comes out clean after piercing their centers.

Ingredients
- Possible fillings / toppings:
- Aebleskiver pan
- 2 c flour
- 2 T sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 eggs, separated
- 2 cups buttermilk
- Cardamon and Vanilla (for flavoring if desired)
- Butter for cooking
- Lingonberry (or favorite) Jam or Butter
- Applesauce, or other apple filling
- Nutella
- Syrups (any flavor)
- Fresh Fruit
- Powdered sugar
Preparation
Step 1
In a large bowl, sift together flour, sugar, baking powder, soda and salt. In a separate bowl. beat the egg yolks, add the buttermilk and beat together. Stir the buttermilk and egg yolks into the dry ingredients.
In a mixer bowl, beat the egg whites until stiff. Fold the egg whites into the batter.
Heat a small amount of butter in each cup of the Aebleskiver pan (even the non-stick pans). Fill each cup 2/3 with batter. Cook until bubbly and bottom is brown. Add dollop of filling if desired and fill remaining with more batter. Turn each Aebleskiver a little more than ¼ turn with a fork, knitting needle or chopsticks. Should look like an open oyster shell. Let cook for a minute or so, then finish turning each Aebleskiver to finish cooking the entire ball.
Line a cake pan with paper towel. Place cooked Aebleskivers in the pan and then in an oven set on warm until all Aebleskivers are done. Serve warm with butter, maple syrup, jams / jellies and sausage links. Or, mix sugar, powdered sugar and cinnamon in a cake pan, and turn cooked Aebleskivers to coat. Eat immediately.
