  • 3 tblsp shortening
  • 2 lbs okra
  • 1 tblsp flour
  • 3 onions
  • 6 oz tomato paste
  • 2 tsp salt
  • 3 bay leaves
  • 1/4 tsp diced leaf thyme
  • 1/4 tsp pepper sauce
  • 1 tblsp worchester sauce
  • 16 oz tomatoes
  • 6 cups water
  • 1 lb shrimp
  • 1 cut crabmeat



Step 1

saute okra in skillet in 2 tblsp of shortening until lightly brown. remove from heat. in kettle melt remaining shortening in blend in flour. cook until dark brown. add onion cook until tender stir often. stir in tomato paste, add seasoning and mix. add tomatoes and liquid and stir on low heat until smooth. add okra and stir in water. bring to boil and add shrimp and simmer 30 minutes. add crab meat and simmer 30 minutes.
