Mushrooms - Spicy Mushrooms

Ingredients

  • 2 plum tomatoes, halved
  • 2 jalapenos, seeded
  • 4 garlic cloves
  • 1/2 cup onion, minced
  • 1/2 lb. sliced mushrooms
  • 1 Tbsp. olive oil
  • 1/2 tea. salt
  • 1/2 cup chicken broth
  • 4 springs parsley, chopped

Preparation

Step 1

Broil halved tomatoes, jalapenos (both skin-side up) and garlic cloves until charred, 6 minutes. Chop vegetables.

Saute onion and mushrooms in olive oil with salt to taste, 8 minutes.

Add tomato mixture, chicken broth, and some chopped parsley; cook 5 minutes.
