Apricot-Pineapple Muffins

Ingredients

  • 1 stick butter
  • 1 cup sugar
  • 1 egg
  • 1 can crushed pineapple with juice
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1 cup quick-cooking oats
  • 1/3 cup very finely cut dried apricots

Step 1

Preaheat oven to 350. Cream butter and sugar in a bowl, add the egg and pineapple and beat well. Add all the dry ingredients and 1/2 teaspoon salt, mix well and fold in apricots. Spoon into a well sprayed miffin cups or use paper liners, bake for 20 minutes.
