Skinny Crock Pot Moroccan Chicken Stew

Ingredients

  • 1 1/2 lbs chicken breasts, cut into cubes
  • 3 carrots, peeled and cut into chunks
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 1 large sweet potato, peeled and cut into chunks
  • 1 can chickpeas, rinsed and drained
  • 1 1/2 Tbsp tomato paste
  • 2 1/2 tsp cinnamon
  • 2 1/2 tsp cumin
  • 3/4 tsp coriander
  • 3/4 tsp cayenne pepper
  • 1 1/2 cup green beans, cut into 1 inch pieces
  • Chicken stock

Preparation

Step 1

Place all of the ingredients into a 3 1/2 or 4 quart slow cooker and add enough chicken stock to cover. Cover and cook on low for 6-8 hours. Serve over whole wheat couscous or brown rice if desired.
