Ingredients

  • Caramel Sauce:
  • 1 fresh pear, peeled, chopped & mashed
  • 1/2 c applesauce
  • 1 c white sugar
  • 3/4 c (pkd) brn sugar
  • 1/2 c chopped pecans
  • 1 c veg oil
  • 2 eggs
  • 3 c all-purpose flour
  • 1/2 t baking soda
  • 1 t rum extract
  • 1/2 whip cream
  • 1/2 c butter
  • 1/2 c dk brn sugar
  • 1/2 c sugar
  • 3 T rum or 1 t rum extract

Preparation

Step 1

350˚ oven
Grease & flour pan, set aside. In large bowl, combine all cake ingredients.
Blend 2 minutes on med speed, scraping bowl often. Pour batter into prepared pan.
Bake 40-45 min, until toothpick inserted comes out clean. Cool 10 minutes in pan.
Invert onto coolng rack.
For caramel sauce, combine all sauce ingredients in heavy saucepan. Bring to boil over med heat, whisking occasionally. Cover & cont to boil for 1 min, uncover & boil 3-4 more min, w/o stirring. Cool slightly before drizzling over warm cake. Serve cake warm or cooled w/seasonal frut & whipped cream.
