Lemon crumb muffins

Ingredients

  • 6 cups flour
  • 4 cups sugar
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 8 eggs
  • 2 cups sour cream
  • 2 cups butter, melted
  • 3 tblsp lemon peel
  • 2 tblsp lemon juice
  • For the streusel,
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/4 cup butter
  • For the glaze,
  • 1/2 cup sugar
  • 1/3 cup lemon juice

Preparation

Step 1

Combine the dry ingredients. Whisk to get her the eggs, sour cream, butter, lemon peel and juice. Stir into dry ingredients and fill up muffin cups.
In a small bowl add streusel ingredients till crumbly and top of the muffins.
Bake @350* for 20-25 minutes. Cool and glaze.
