GARLIC & HERB POTATOES

NOTES:
Short cut--Use a microwave safe baking pan and microwave the prepared potatoes on HIGH, stirring occasionally, until tender, about 10 minutes. Continue baking in a 425° F. oven for 6-8 minutes until potatoes are crisp.
Any assortment of fresh herbs can be used in place of the rosemary and thyme. Try chopped chives or oregano.
Extra virgin olive oil in place of butter reduces cholesterol. Use salt free seasoned salt flavoring instead of regular seasoned salt to reduce sodium.
Ingredients
- 1 3/4 pounds small red potoates,scrubbed
- 1/3 cup margarine, melted
- 2 tablespoons minced fresh garlic
- 2 tablespoons chopped parsley
- 1 tablespoon chopped rosemary
- 1 tablespoon chopped thyme
- 1 teaspoon seasoned salt
- 1 teaspoon paprika

Step 1
Preheat oven to 425° F.
Cut each potato into quarters. Place in an ungreased 8 inch square baking dish.
Combine the remaining ingredients in a small bowl. Mix well. Pour over the potatoes and stir well.
Bake until the potatoes are tender, 20-25 minutes.
