Clam Chowder

  • 2 - 6.5 oz cans minced clams
  • 1 cup onions - chopped fine
  • 2 cups finely diced potatoes
  • 3/4 cup flour
  • 1 1/2 teaspoon salt
  • 1 cup finely diced celery
  • 3/4 cup butter
  • 1 quart half and half cream
  • dash pepper
  • 1/2 teaspoon sugar



Step 1

Drain juice from clams & pour juice over vegetables. In medium saucepan, add enough water to barely cover vegetables (onions, potatoes, celery) cover and simmer over medium heat until potatoes are tender - about 20 minutes

In meantime, melt butter, add flour and blend. Cook a minute or two. Add cream, cook and stir until smooth and thick using wire whisk to blend. Add to undrained vegetables, clams and heat through. Season with salt and pepper and sugar to taste.
