Broccoli Soup

  • 1 1/2 c. chopped broccoli
  • 1/4 c. diced celery
  • 1/4 c. chopped onion
  • 1 c. chicken broth
  • 2 c. milk
  • 2 Tbsp. cornstarch
  • 1/8 tsp. salt
  • pepper
  • 1/4 c. shredded cheddar cheese



Step 1

Cook vegetables in broth in a sauce pan. Boil, cover, reduce heat. Cook until tender. Mix cornstarch in milk. Add to cooked vegetables with salt and pepper. Cook, stirring constantly, until slightly thickened. Remove from heat, add cheese and stir until melted.
