Ingredients
- 2 tbsp olive oil
- 1 med onion, minced
- 8 oz raw bacon, diced
- 2 lbs ground beef
- 6 oz cheddar cheese, grated
- 1/2 cup bread crumbs
- 3 eggs, beaten
- 2 tsp salt

Preparation
Step 1
preheat to 450. brush 13x9 dish with olive oil. heat 1 tbsp oil in large skillet over med heat. add the onions and bacon and saute, stirring frequently until golden brown - about 10 mins.
using a slotted spoon, transfer onions and bacon from the pan to a small plate. let cool
combine bacon, onions and rest of ingredients in a large bowl and mix by hand until thoroughly mixed.
roll mixture into 24 golfball sized meatballs, packing the meat firmly.
roast for 18-20 minutes. cool for 5 mins before serving
