Try this rub on chicken, instead of steak.

Buy two 1 1/2 pound steaks, prepare both with the rub and freeze one steak before grilling. To freeze, carefully wrap steak in heavy duty aluminum foil, eliminating excess air. Freeze for up to one month.

Make a quesadilla--thinly slice steak and place in a flour tortilla with shredded cheese and slices of onion and green pepper. Fold in half, cook in a non stick skillet until cheese melts.

  • 1 1/2 tablespoons firmly packed light brown sugar
  • 1 1/2 teaspoons ground coriander
  • 4 cloves garlic, minced
  • 2 teaspoons olive oil
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 (3 pound) flank steak

Preheat grill to medium heat. Place the grill rack 8 inches from the heat.

Combine the brown sugar, coriander, garlic, olive oil, chili powder, ginger, salt and black pepper in a small bowl. Mix well.

Rub the brown sugar mixture on both sides of the steak. Place the steak on the grill and grill for 16 minutes, or until an instant-read thermometer inserted into the center reads 160° F., turning once.

Cut the steak diagonally across the grain into 1/4 inch slices and serve.
