Ingredients

  • 1/4 C bulgur
  • 1/2 C snipped parsley
  • 1/4 finely chopped red onion
  • 1/4 t crushed red pepper
  • 1 t grund cumin
  • 1/2 t salt
  • 1/4 t ground allspice
  • 1 lb ground lamb
  • 1 10oz. can tomatoes with green chili peppers
  • 3 T snipped parsley.

Preparation

Step 1

In bowl cover bulgur with boiling water; let stand do minutes. Drain well. Stir in 1/2 C parsley, onion, pepper, cumin, salt & allspice. Add meat; mix well. Shape into 8 4x1 logs. Thread lengthwise on skewers. Grill over med. hot coals 10-12 min.
Meanwhile for sauce, combine tomatoes & 3 T parsley. Bring to boiling; reduce heat. Simmer 12-15 min.
Serve with meat.
