Amaretto Syllabub

Ingredients

  • 1/3 c amaretto liqueur
  • 5 t caster sugar
  • 1 T lemon juice
  • 250 ml thickened cream
  • 250 g pkt morbidi (soft amaretti biscuits)

Preparation

Step 1

Place liqueur, sugar and juice in a bowl and whisk until sugar dissolves.
Whisk in cream and continue to whip until thickened but still soft and billowy.
Crumble 2 biscuits each into four 150ml glasses. Spoon syllabub over top. Crumble another 2 biscuits and sprinkle over the top of each glass.
Serve remaining biscuits on the side.
