RUM CAKE

Ingredients

  • Cake:
  • 1 pkg. butter recipe cake mix
  • 1 pkg. instant vanilla pudding
  • 1/2 cup light rum
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1/2 cup nuts, optional
  • Glaze:
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1/8 cup rum
  • 1/8 cup water

Preparation

Step 1

Preheat oven to 325°F. Grease and flour bundt pan. Sprinkle nuts in bottom of pan. In mixing bowl, add all dry ingredients. Add all wet ingredients and mix 2 minutes with electric mixer. Bake for 1 hour. Cool 5 minutes. Meanwhile, make glaze by combining all ingredients in small saucepan. Bring to a boil, cook 5 minutes. Pour glaze over cake.

Variation for Glaze from Dorthy’s recipe:
¼ lb. butter
¼ cup water
1 cup sugar
½ cup rum
Melt butter in a sauce pan. Stir in water and sugar. Boil 5 minutes stirring constantly. Remove from heat. Stire in rum.
