Ingredients
- 1 lb lean boneless pork loin roast
- 2 bacon slices
- 2 cups chopped onion
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp pepper
- 2 cans diced tomatoes, drained
- 2 cans great northern beans, rinsed and drained
- 1/2 lb low-fat smoked sausage, cut into 1/2 inch cubes
- 8 tsp finely shredded fresh Parmesan cheese
- 8 tsp chopped fresh flat-leaf parsley
Preparation
Step 1
Trim the fat from the pork and cut into 1-inch cubes.
Cook bacon in skillet until crisp. Remove from pan, crumble, and set aside.
Add onion, rosemary, thyme, and garlic to bacon drippings in the skillet; saute 3 minutes or until tender. Stir in crumbled bacon, salt, pepper, and tomatoes; bring to a boil. Remove from heat and set aside.
Mash 1/2 of the beans with a potato masher until chunky. Combine mashed beans with remaining beans, pork loin, and sausage. Place half of bean mixture in crock pot. Top with 1/2 of tomato mixture, and repeat layers. Cover with lid and cook on high for 1 hour. Reduce heat to low and cook 4 hours longer. Sprinkle Parmesan cheese and parsley over each serving.
