Ingredients

  • Spice mix:
  • 1 1/2 lb boneless, skinless chicken breasts
  • 6 sandwich rolls
  • 1 tbsp. vegetable oil
  • butter or mayonnaise
  • 1/4 cup melted butter (later)
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp white pepper
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried thyme leaves
  • 1/2 tsp dried oregano leaves

Step 1

freeze chicken and sandwich rolls until ready to serve. Mix spices; store in a covered container such as an empty jar, which you've labeled "blackened chicken spices."
to serve, thaw rolls and chicken. coat each piece of chicken with about 1 tbsp spice mix. the mixture is hot and spicy, so adjust amount for taste of each person. using a pastry brush, baste each piece of chicken with melted butter. grill chicken, basting with butter after turning once. grill about 10 minutes or until no longer pink in the middle. Or cook chicken in a large, nonstick skillet in hot oil over medium heat. cook, turning chicken once, until it's done, about 10 minutes. serve sandwich rolls spread with a little butter or light mayonnaise.

freeze in: 1 qt bag; 1 small jar
serve with: chips; watermelon salad
Note: use spice mix on your favorite fish fillets
