Tilapia with Lemon-Garlic Sauce

Ingredients

  • 4 tilapia filets
  • 1/4 tsp of each salt and pepper
  • 3 TBSP Wondra (quick flour)
  • 2 TBSP butter
  • 1 TBSP olive oil
  • 1 TBSP minced garlic
  • 1/3 cup dry white wine
  • 1/3 cup chicken stock
  • 2 TBSP chopped fresh parsley
  • 1 TBSP lemon juice

Preparation

Step 1

1. Sprinkle fish with salt and pepper. Dredge in flour. Reserve remaining flour.
Heat skillet and add butter and oil. Add fish cook 2 minutes on each side or until fish flakes when tested with a fork. Remove from pan and keep warm.

2. Add reserved garlic to pan add garlic cook util lightly browned, stir constantly. Add wine and chicken stock. Cook 2 minutes until slightly thickened. Remove pan from heat and add remaining butter, parsley and lemon juice. serve with fish
