Ingredients
- For the crust:
- 1 stick unsalted butter
- 1/4 cup sugar
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup all purpose flour
- For the filling:
- 1 cup plus 2 tablespoons sugar
- 4 1/2 tablespoons flour
- 3 eggs
- Zest and juice of four lemon
- (substitute lime for lemon if desired)
- Powdered sugar for dusting
Preparation
Step 1
Preheat oven to 325.
Line 8 x 8 inch pan with alumininum foil. Shiny side down. Foil should come up over the side of the pan for easy removal.
In a medium bowl, melt butter. Stir in sugar, vanilla, salt, and baking powder. Sift in flour. Stir until incorporated. Will not be a stiff dough. Press into bottom of pan. Bake for 20-25 minutes.
Meanwhile, stir together sugar and flour. Beat in egg. Zest all four lemon and add juice of all four lemon. Blend for one minute.
When crust is golden brown, turn the oven down to 300 and pour lemon mixture onto the crust in the hot pan.
Bake at 300 for 20 to 25 minutes or until the middle doesn't jiggle.
Let bars cool completely. Pull the foil up gently. It should come right out of the pan. Place onto cutting board. Pull the sides of the foil down gently. May need to cut edges away. Cut into 12 squares.
Dust on powdered sugar if desired.
