Roasted Asparagus & Grape Salad

Ingredients

  • 5 Slices Bacon , cut into 1/2-in. slices
  • 20 Thin Asparagus Spears, trimmed & cut in half
  • Salt & Freshly Ground Black Pepper to taste
  • 3/4 C. Coronation Grapes
  • 1/3 C. Parmesan Shavings
  • 2 Tbsp. Balsamic Vinegar
  • 2 tsp. Extra-Virgin Olive Oil

Preparation

Step 1

Preheat oven to 375. In a med-sized skillet with an oven-proof handle over med-high heat, cook bacon. Once it begins to turn golden, add asparagus, salt & pepper & saute for 3 min. Place skillet directly into oven & bake for 6-8 min. till asparagus is tender. Use a slotted spoon to transfer bacon & asparagus to a lg. bowl, leaving excess bacon fat in skillet. Add grapes & parmesan shavings, vinegar & oil to bacon & asparagus; mix gently. Serve warm
