Ingredients

  • 2 c. flour
  • 3/4 c. sugar
  • 1/4 c. shortening
  • 3/4 c. milk
  • 2 1/2 tsp. baking powder
  • 3/4 tsp salt
  • 2 c. blueberries
  • Crumb Topping
  • 1/2 stick firm butter
  • 1/2 c. sugar
  • 1/3 c. four
  • 1/2 tsp. cinnamon
  • Glaze
  • 1/2 c. powdered sugar
  • 1/4 tsp. vanilla
  • 1 1/2 tsp. hot water

Preparation

Step 1

Heat oven to 375. Grease round 9 in. pan, or 8 in. square pan. Prepare crumb topping;reserve. Mix
remaining ingredients except blueberries and glaze;
beat 30 seconds. Fold in blueberries. Spread in pan,
sprinkle with crumb topping. Bake 45-50 min. Cool
10 minutes. Remove from pan. Drizzle glaze over warm coffee cake.

Crumb Topping

Cut butter into remaining ing. with blender until crumbly.

Glaze

Mix all ing. until smooth and drizzling consistency.
