Pea Soup

I received this recipe in a French Canadian cooking class taught by a chef at La Veille Gare in the 90s. It has remained my favorite pea soup.

Ingredients
- 1 onion
- 1 carrot
- 2 sticks celery
- 1/2 c low sodium chicken soup base
- 1 c chopped ham meat
- 1 ham bone broken in half
- pepper to taste
- 16 cups water
- 4 c split green peas (if using yellow peas, soak overnight)

Step 1
Finely chop onion, carrot and celery. Combine all ingredients except peas in a very large pot, bring to a rolling boil and then add the peas.
Boil until the peas are soft and almost all blended in, stirring from time to time to prevent sticking. Green peas take approximately 3/4 hour to cook, yellow peas take longer.
