Ingredients
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1/2 cup red onion, diced
- 1 can (16 oz) of corn, drained
- 1 clove garlic, minced
- 1 tsp cilantro
- 1/4 cup olive oil
- 4 tbsp red wine vinegar
- 1 tsp lime juice
- Freshly ground pepper
- 1 can (15 oz) black beans, drained
- Tortilla chips
Preparation
Step 1
Seed and dice all bell peppers. In a salad bowl, combine bell peppers, onion, corn, garlic and cilantro. Toss to mix. Add olive oil, vinegar, lime juice and salt and pepper to taste. Toss again. Add the black beans, toss well and serve with tortilla chips.
