  • 2 cups all purpose flour
  • 2/3 cups packed brown sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 cups shredded carrots
  • 2 beaten eggs
  • 2/3 cups milk
  • 1/3 cup canola oil

Step 1

1. Preheat oven to 350 F. Grease bottom and 1/2 inch up the sides of a loaf pan; set aside.
2. In a bowl, stir together flour, brown sugar, baking powder, cinnamon, nutmeg, soda and salt. In another bowl combine carrots, eggs, milk, and oil; add to dry ingredients, stirring just until moistened.
3. Pour batter into prepared pan. Bake for 55 to 60 mins for loaf pan. Cool for 10 mins.
