Chicken w/Potatoes & Peas
Old family recipe-seems to be a variation of Chicken Vesuvio

Ingredients
- Chicken
- potatoes
- peas
- tomato sauce
- onion
- garlic
- seasoned bread crumbs
- Opt: wine, grated cheese such as parmigiano or pecorino romano
Preparation
Step 1
Wash & chop potatoes, put into bottom of baking pan
Add chopped onion, garlic
Add frozen peas
Add some tomato sauce, water, wine if using-liquid base will help cook potatoes & make sauce
Season w/salt & pepper
Place chicken pieces on top
Sprinkle w/seasoned bread crumbs & cheese if using
Bake approx 2 hrs
Try-use skinless bone-in chicken, drizzle w/olive oil before sprinkling w/ bread crumbs,bake covered w/foil, remove foil & brown,
or sprinkle w/bread crumbs after removing foil & brown
