Bombay Chicken Salad with Raspberries (or Grapes)

  • 1/4 cup mayo
  • 1 tbs orange juice
  • 1 tsp honey
  • 1/2 tsp curry powder
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 pd cooked chicken breast, cut into cubes
  • 1/2 cup sliced celery
  • 1/3 cup chopped walnuts
  • 1 cup raspberries (or grapes)



Step 1

Combine mayo, orange juice, honey, curry powder, salt and pepper.
Add chicken , celery, and walnuts.
Toss to coat evenly.
Fold in 1/2 cup raspberries (gently). Garnish plate with remaining raspberries.
