  • 1/3 c crisco butter shortening or 1/3 stick
  • 1/2 c chopped celery
  • 1/3 c chopped onoin
  • 1/3 c flour
  • 1/4 t salt
  • 1/8 t pepper
  • 1 (14-1/2oz) can chicken broth
  • 2 c milk
  • 3 c shredded colby or cheddar cheese
  • 1/8 t liquid smoke
  • bacon bits

Step 1

Melt shortening in 3qt saucepan. Add celery and onion. Cook and stir over medium heat 2-3 minutes or until tender. Stir in flour, salt and pepper. Cook and stir until bubbly. Blend in chicken broth and milk. Cook and stir 10-12 minutes or until mixture comes to a boil and thickens. Remove from heat. Add the cheese 1c at a time, stirring to melt after each addition. Stir in liquid smoke. Garnish each serving with bacon bits if desired.
