- 3 tablespoons Olive Oil
- 1/2 med onion, finely chopped
- 1 garlic clove, minced
- 1 cup arborio rice
- 1 tsp ground chipotle powder or spicy chili powder
- 6 cups hot chicken broth
- 3 tablespoons butter
- 1/2 cup shredded Sharp Cheddar cheese
Heat oil in a saucepan over med-high heat.
Add onion and garlic, cook and stir 2-3 minutes
Add rice, cook and stir 3-5 minutes or until rice becomes translucent and is slightly toasted
Add chipotle (chili) powder, cook and stir 30 sec
Add 1 cup of hot chicken broth and reduce heat to medium
Cook and stir continuously until liquid is absorbed, about 5 min
Add 1 more cup of chicken broth, cook and stir 5 minutes more. Repeat until rice is al dente
Remove from heat, stir in butter, cheddar cheese, and salt and pepper to taste.
Cover and let stand about 5 minutes. Serve immediately.
