Ingredients

    tablespoons Olive Oil

    med onion, finely chopped

    garlic clove, minced

    cup arborio rice

  • 1

    tsp ground chipotle powder or spicy chili powder

  • 6

    cups hot chicken broth

  • 3

    tablespoons butter

  • 1/2

    cup shredded Sharp Cheddar cheese

Directions

Heat oil in a saucepan over med-high heat. Add onion and garlic, cook and stir 2-3 minutes Add rice, cook and stir 3-5 minutes or until rice becomes translucent and is slightly toasted Add chipotle (chili) powder, cook and stir 30 sec Add 1 cup of hot chicken broth and reduce heat to medium Cook and stir continuously until liquid is absorbed, about 5 min Add 1 more cup of chicken broth, cook and stir 5 minutes more. Repeat until rice is al dente Remove from heat, stir in butter, cheddar cheese, and salt and pepper to taste. Cover and let stand about 5 minutes. Serve immediately.
