Spanish Lamb Stew

Ingredients

  • lamb, cubed
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • garlic, 1 clove
  • white beans, i.e. cannellini
  • 2 tbsp. flour
  • 1 bay leaf
  • 2 tomatoes, chopped
  • 1 can of beef stock or 2 cups of water
  • salt and pepper
  • 1 chorizo sausage, sliced

Preparation

Step 1

Heat olive oil in a deep casserole pan. Brown chopped lamb. Add onions and garlic. Add flour. Brown.

Add stock. Then add bay leaf, tomatoes, and chorizo. Bring to a boil. Then turn heat down to a simmer. Add beans after half an hour. Cook for 1 hour.
