  • Six Eight oz. jars
  • 2 lbs. Peaches, pitted and peeled
  • 2 tab. Lemon juice
  • 1 tab. Finely diced, candied ginger
  • 5 cups sugar
  • 3/4 cup water
  • 1 box powdered fruit pectin


Servings 6


Step 1

Chop peaches fine. Stir in lemon juice. Add ginger. Use hot water to soften ginger and remove sugar. Let stand at room temperature. Combine water and pectin in saucepan. Boil one minute. Stir in fruit mixture. Continue stirring for three minutes. Ladle quickly into hot jars. Store jam in freezer.
