Ingredients

  • 1/2 medium onion
  • 5 tablespoons butter, melted
  • 1/4 cup flour
  • 2 cups half and half
  • 2 cups chicken broth
  • 8 ounces broccoli, finely chopped
  • 1 cup shredded carrots
  • salt and pepper
  • 2 cups grated sharp cheddar cheese
  • 1/4 teaspoon nutmeg

Step 1

saute onion in 1 tablespoon butter, set aside. Using a whisk, combine the remaining 4 tablespoons butter and the flour in a pot over medium heat. Cook stirring frequently for about 4 minutes. Slowley add the the half and half, continue stirring, add chicken broth, whisking all the time. Simmer for 20 minutes. Add the broccoli, carrots, onion, cook over low heat until veggies tender, about 20 minutes. add salt and pepper, add cheese and stir until well blended, stir in nutmeg.
