Black Bean Chicken Salad w/Tequila Lime Vinaigrette Dressing

Ingredients
- Dressing:
- 6 cups mixed salad greens
- 1 1/2 cups of cubed grilled chicken breast
- 1 can (15 oz) Black Beans, drained and rinsed
- 1 cup chopped fresh tomatoes
- 1 cup chopped green bell pepper or diced chilis (well drained)
- 1/2 cup Mexican or Chihuahua cheese
- 1/4 cup finely chopped cilantro
- 1/4 cup finely chopped tomato
- 1 tablespoon cider or red wine vinegar
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon lime zest
- 1 garlic clove, minced
- dash of salt (kosher or coarsely ground sea salt)
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon chili powder
- 1 oz Tequila (optional)
- Tortilla Chips (opitonal garnish)

Preparation
Step 1
In large salad bowl, combine salad ingredients.
In food processor or blender, combine the dressing ingredients.
Process until dressing is smooth.
Pour dressing over salad and toss and coat.
Garnish with crushed tortilla chips.
