Ingredients
- 3/4 cup uncooked white rice
- 1 pound boneless chicken breast
- 1 tablespoon vegetable oil
- 8 ounces diced ham
- 4 slices Swiss cheese
- Can of cream of chicken soup
- 1/4 cup sour cream
- 1/4 cup milk
- 1 tablespoon Dijon mustard
- 1 cup cracker crumbs
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika

Step 1
Preheat oven to 350 degrees. Cook rice according to package directions; season with salt and pepper. Season chicken with salt and pepper. Heat oil in a skillet. Cook chicken 5 minutes per side or until golden brown and juices run clear; shred chicken. Spread cooked rice in the bottom of an 8 x 8 inch casserole dish. top with shredded chicken, diced ham, and Swiss cheese. Combine soup, sour cream, milk, and mustard; spread over cheese. Combine cracker crumbs, parsley, garlic powder, and paprika. Sprinkle over soup mixture. Bake, uncovered, 30 minutes.
