Ingredients

  • Desired garnish:
  • 1 package (11 oz) pie-crust mix
  • 1 1/2 lbs. fresh spinach or 2 packages (10 oz. each) frozen chopped spinach
  • 2 Tbs. butter or margarine
  • 1/2 cup chopped onion
  • 1 clove garlic chopped
  • 3 Tb. Butter or margarine
  • 3 Tb. Flour
  • 1 1/2 cups milk
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • Dash nutmeg
  • 6 eggs
  • 8 oz. mozzarella cheese, shredded
  • Thin red onion slices
  • Chopped ham
  • Tuna chunks
  • Tomato slices
  • Cubes of cooked beef or chicken
  • Shredded mozzarella or cheddar cheese

Step 1

Prepare pie-crust mix according to package directions. Roll out on floured surface to a round large enough to line bottom and sides of an ungreased 10-inch glass pie plate. Flute a high edge on pie shell. Cook spinach, press out all moisture. Chop finely. In skillet heat 2 Tb. butter and saute onion and garlic until golden. Stir in spinach. In a saucepan melt 3 tb butter, stir in Flour, gradually stir in milk. Stir over low heat until sauce bubbles and thickens. Stir in salt, pepper, nutmeg and spinach mixture. Beat eggs until well blended. Stir eggs and cheese into spinach mixture, stir until well blended. Pour into pie shell, Bake in preheated oven (350 degrees F) 40 to 45 minutes or until puffed and firm to the touch in the center. Top each piece of pie with desired garnish. Serve hot.
