Squash Casserole from Savannah Ga
Bake 350 for 20 min. Serves 4
- 3 C yellow squash or zucchini slices. (3 yellow squash is 3 cups)
- 1/4 C sour cream
- 1 T butter
- 2 T grated cheese
- 1/2 t salt
- 1/8 t paparika
- 1 egg yolk beaten
- I T chopped green onions
- 3 T butter melted
- Crushed bread crumbs
Preheat oven 350
Place squash in pan with small amount of water cover bring to boil, simmer for 6 to 8 min. Drain well.
In med pan add sour cream, butter, grated cheese, salt and paparika. Stir on low till cheese is melted. Remove from heat stir in beaten egg and green onions. Add squash and mixture.
Pour into sprayed baking dish .
Cover lightly with breadcrumbs , 4 T butter, 1/4 C cheese
