Will cook this is cast iron skillet. Preheat oven to 425. Whisk 1 c whole milk, 4 large eggs and 1/4 tsp salt, THen whisk in 1 c flour until mostly smooth, let stand a few mintues then whisk again, can use blender. Heat 2 tbs butter in 10 inch cast iron skillet, add 3 oz or 1/2 c diced ham and 1/2 tsp tarragon. Cook only about a minute or two. Then pour on milk mixture and put in oven and bake until puffed and golden, about 15-17 minutes. Without removing from oven, sprinkle on 1 c grated extra sharp shredded cheddar cheese and turn on broil and broil until very puffy and golden, will only be a coupe minutes. WE TRIED THIS 1/12 AND IT WAS VERY GOOD, EVERYONE LOVED IT. CAN ALSO DO A SWEET ONE AND ADD STRABERRY PRESERVES, POWDERED SUGAR, WHATEVER.
