Potato Gratin w/ Brie

Ingredients

  • 2 lbs. Yukon gold potatoes (peeled and sliced 1/8 in. thick)
  • 1/2 lb. thick cut bacon cut into 1/2 in. strips) or ham cubed
  • 2 T butter
  • 1/2 chopped onion
  • 1 lb. brie
  • Garnish w/ pepper and parsley

Preparation

Step 1

Preheat over to 350 degrees. Cover potatoes with water and boil to cook potatoes until tender - 20 min.
Saute bacon until crisp. Drain on paper towel. Add onions until brown.
Layer potato slices in a 10 in. pie dish. Top w/ bacon, onion and brie. Season with pepper. Bake until golden brown - 30 min.
