Mediterranean Baked Beans with Feta

Ingredients

  • 1 tbls olive oil
  • 1 red onion, sliced
  • 2 garlic cloves, crushed (optional)
  • 500 g passata (or 2 cans crushed tomatoes and 1 tbls tomato paste)
  • 2 cans navy or butter beans, rinsed and drained
  • 1 tbls fresh oregano leaves or 1 tsp dried
  • Sea salt to taste
  • 1-2 tbls Panela or brown sugar
  • 1 tbls Dijon Mustard
  • 1 big handful of rocket
  • 1 cup goat’s feta, crumbled roughly

Preparation

Step 1

Saute the onion in a cast iron pan with olive oil and garlic.

Once the onion has softened add the beans, passata, mustard, oregano and salt.

Bake in the oven on high. Once it's almost cooked, add the feta and put back in the oven to allow the feta to soften a little.

Serve with the rocket
