Ingredients

  • 1 3 rib roasts, 7-8 lbs.
  • 1 tblsp salt
  • 1 1/2 tsp pepper

Preparation

Step 1

Two hours before roasting, remove the meat from the fridge. Preheat the oven to 475*. With rack on the lowest position, place the seasoned meat Ina large roaster and into the oven. Roast the meat for 45 minutes. Reduce heat to 325* and roast for 30 minutes. Then increase temp to 425* and roast for 15-30 minutes to an internal temp of 125*. Transfer the roast to a cookie sheet and let it rest, covered in foil for 20 minutes.
