Ingredients
- 1 tablespoon butter
- 1 onion, chopped
- 2 cups chicken broth
- 3 medium potatoes peeled and cut into 1/2 inch dice
- 1 cup fresh or frozen corn kernels
- 1 cup evaporated milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Preparation
Step 1
In a large saucepan, melt butter over medium heat. Add onion and cook, stirring frequently, until golden and tender, about 7 minutes.
Add potatoes and chicken broth bring to a boil. Reduce heat to low and simmer, partially covered until potatoes are tender, about 15 minutes.
Stir in corn kernels, milk, salt and pepper. Simmer uncovered, until heated through, about 5-10 minutes.
