Ingredients

  • 1 cup butter, softened
  • 1/2 cup icing sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 sifted all purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped pecans
  • Maraschino cherries, well drained

Step 1

Blend butter, icing sugar and vanilla thoroughly. Sift flour and salt together and stir in. Mix in the nuts. Chill dough for a couple of hours or overnight.

Preheat oven to 375. Wrap a heaping teaspoon of dough completely around a cherry for each cookie. Cherries have to be good and dry or you’ll have problems with seepage. Set cookies on an ungreased cookie sheet. Bake 10-12 minutes. Cookies will be set but not brown. While warm, roll cookies in additional sugar. Cool and roll in icing sugar again. Makes 4 dozen.
