Apple Cream Cheese Tart

  • Dough:
  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 t salt
  • 1 t lemon juice
  • 1 cup all purpose flour
  • Filling:
  • 2 cups cream cheese, soft
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 t vanilla extract
  • 1 t grated lemon zest
  • Topping:
  • 2 large apples
  • 1/2 cup granulated sugar
  • 1 t ground cinnamon

Step 1

For the Dough: In a large bowl, cream together th butter, sugar, salt, and lemon juice. Stir in the flour until well blended. Press the dough into the bottom and about 1½ inches up the sides of a 9 inch springform pan. Refrigerate. Preheat the oven to 425.

For the Filling: Place the cream cheese and brown sugar in a mixing bowl; beat until fluffy. Add the egg and vanilla, beat until smooth. Scrape the sides and bottom of the mixing bowl, add lemon zest, and beat another 30 seconds. Pour the filling into the prepared shell; return the pan to the refrigerator.

For the topping: Peel, core, and cut the apples into ¼ inch slices; place in a large bowl. Stir together the sugar and cinnamon; sprinkle over the apple slices and stir to coat them.

To assemble: Arrange the apple slices over the filling; pur any sugar and juice that collects in the bowl over the top.

Bake for 15 min, then reduce the oven temp to 350; bake for 40-45 min longer. Remove from the oven and cool on a rack. Use a knife to loosed the tart before removing the pan sides. Refrigerate until serving; you may wish to take the chill off each slice with a brief stint in the microwave at low to med power before eating.
