Ingredients
- 1 1/2 tbs olive oil
- 4 cloves garlic
- 4 sprigs rosemary
- 4 sprigs thyme
- 1 red chile pepper
- 2 lbs fish fillet
- salt and pepper
- Sauce
- 1 tbs olive oil
- 24 small onions
- 24 cherry tomatoes
- 2 tbs butter
- 12 roasted garlic clovees
Preparation
Step 1
mix first 5 ingredients and pulse in processor
rub mixture over fish and refrigerate for 1 hour
preheat oven to 350 degrees
heat 1 1/2 tbs olive oil in skillet on med. heat sprinkle
fish with salt and pepper sear for app. 5 min. continue cooking in oven for about 25 min. until fish is flaky
Sauce
heat oil in pan over med. add onions and cook til tender about 15 min.
add tomatoes and 12 roasted garlic cloves cook over high heat until onions are golden brown, about 5 min.
add butter salt and pepper
