Orange-Honey Muffins

Ingredients

  • 1/2 cup orange juice
  • 2 cups flour
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 cup honey
  • 2/3 cup butter, melted
  • 1/2 cup egg substitute
  • 1 tsp. vanilla

Preparation

Step 1

Preheat the oven to 375 degrees.

Coat 12 muffin cups with nonstick cooking spray or line with muffin papers.

In a medium bowl, combine the flour, sugar, baking powder and baking soda. Mix well.

In a medium bowl, combine the honey, orange juice, butter, egg substitute and vanilla; mix well. Add to the dry ingredients.

Fill each muffin cup 2/3 full with batter.

Bake for 15 to 20 minutes, until golden.
