Ingredients
- 1 sweet red pepper cut into chunks
- 1/3 cup water
- 1 cup crumbled feta
- 1/8 tsp crushed red pepper flakes
Preparation
Step 1
In a medium skillet combine peppers and water. Cover and bring to boil over high heat. Reduce heat to low and simmer 10 mins or until tender. Uncover and boil until all liquid has evaporated, about 4 minutes. In food processor, purée pepper, cheese and pepper flakes until smooth. Transfer to bowl. Refrigerate 2 hours. Stores up to 3 days.
