Ingredients

  • 1 to 2 medium shallots (diced)
  • 1 tablespoons & a drizzle of olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/8 cup parmesan cheese
  • 1/4 cup chopped fresh parsley
  • butter (unsalted)
  • salt to taste
  • loaf of bread (hard crust)

Step 1

Preheat oven to 350 degrees. Use 1 tablespoon of oil in a skillet and cook shallots until caramelized (salt to taste). Meanwhile cut bread into 1" thick slices and arrange on a cookie sheet. Spread shallot and oil mixture evenly over slices. Place a thin pat of butter on each slice. Mix mozzarella cheese with a drizzle of olive oil and parsley, spread evenly over slices. Sprinkle with Parmesan cheese. Bake for about 10 minutes.
