Crab Stuffed Flounder

Ingredients

  • 1 small onion - chopped
  • 1/2 cup chopped celery
  • 1/2 cup red bell pepper
  • 4 tbsp. butter, divided
  • 1 can flaked crab meat
  • 1/2 cup bread crumbs
  • 3 tbsp lemon juice, divided
  • pinch of salt, pepper and red pepper flakes
  • 4 small flounder fillets
  • paprika

Preparation

Step 1

Preheat oven to 350* (butter baking dish)
Saute onion, celery and pepper in 2 tbsp butter
Mix in crab, breadcrumbs, 1 tsp. lemon juice, S & P and crushed pepper
Mound mixture in center of fillets - overlap and fasten with toothpicks
Place in buttered dish. Add any remaining stuffing mix on top of fish. Drizzle remaining melted butter and lemon juice on top of fish.
Bake at 350* for 18 - 20 minuted or until top is slightly browned.
Sprinkle with paprika
