Hawaiian Banana Nut Bread

Ingredients
- 3 cups all-purpose flour
- 2 cups sugar*
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 eggs, beaten
- 1 cup vegetable (or canola) oil*
- 2 cups mashed bananas (ripe)
- 1 8-ounce can crushed pineapple with juice
- 2 teaspoons vanilla extract
- 1 cup chopped macademia nuts (or walnuts)

Step 1
Preheat oven to 350 degrees.
Combine dry ingredients and set aside.
Combine wet ingredients in large bowl. Add dry ingredients and blend well with electric mixer. Stir in nuts.
Pour batter into 2 greased & floured 9x5 inch loaf pans.
Bake for 65 minutes until done, or until a toothpick inserted into the middle comes out clean.
Cool 10 minutes before removing from pans. Remove to wire racks and cool completely.
* If you want a lighter version, I have had good results with replacing 1/2 cp of the oil with a 1/2 cp of apple sauce, and replacing 1 cp of sugar with 1 cp of splenda. Keep an eye on it though because I had to decrease the time by almost 10 minutes.
